The Chardonnay was fermented in barrels under temperature control. The wine then underwent full malolactic fermentation.
The Viognier was fermented in old barrels. French oak staves were added to both the Chardonnay and Viognier. The wine was then blended to produce a balanced fruity wine with some oak and malolactic complexity.
Chardonnay was machine harvested in Patutahi. Viognier was hand harvested in Patutahi.
