Merlot grapes were fermented in open top stainless vats. Carmenere, Cabernet Sauvignon and Cabernet Franc were co-fermented in a small open top fermenter. After primary ferment the wines underwent full malolactic fermentation in barrels. French, Hungarian and American oak staves were added for 10 months. The wine was blended to produce a rich complex wine.
Merlot was machine harvested at Kirkpatrick Estate in Patutahi in excellent condition and good ripeness. Carmenere Cabernet Sauvignon & Cabernet Franc were hand harvested from Hihi Wines vineyard in Ormond in excellent condition and good ripeness.
