Malbec grapes were fermented in open top stainless vats. 20% of the juice was bled from the wine to increase the skin to juice ratio resulting in more concentrated flavours and bigger tannins. After primary ferment the wines underwent full malolactic fermentation in old barrels. French and American oak staves were added for 10 months.
Malbec was harvested from Hihi Wines vineyard in Ormond in excellent condition and good ripeness.
